Proxy Foods AI Secures $6 Million Seed Round to Enhance Food R&D Platform
Proxy Foods AI has successfully raised $6 million in seed funding to expand its innovative AI-driven research and development platform for the food and beverage industry.

Proxy Foods AI has successfully completed a $6 million seed funding round aimed at enhancing its AI-native research and development platform tailored for the food and beverage industry. This funding will enable the company to bolster its food science, regulatory, and commercialization capabilities while expanding its global customer base.
The investment round was led by Ted Leonsis, who is the Founder, Chairman, Managing Partner, and CEO of Monumental Sports & Entertainment, with notable participation from Robert G. Hisaoka and SWaN & Legend Venture Partners. The funds will be utilized to enhance the company's enterprise platform, accelerate the development of AI agents for food and beverage innovation, and increase adoption among consumer packaged goods manufacturers, foodservice operators, and ingredient suppliers.
Proxy Foods AI's platform is designed to assist companies in integrating institutional R&D knowledge, predicting formulation performance prior to laboratory testing, and speeding up the development of new products and reformulations. The company claims that clients utilizing the platform have seen significant improvements, including "reducing new product development iterations by 80%, achieved 2-10% reductions in cost of goods for reformulation projects, shortened prototype development timelines from months to days and generated full platform return on investment from a single successful product launch."
The company boasts an impressive clientele, including Barilla, MISTA, restaurant chain CAVA, and Gefsinus, with the average enterprise customer generating over $1 billion in annual revenue. Panos Kostopoulos, CEO of Proxy Foods AI, emphasized the transformative potential of their platform: "Leading food and beverage companies leverage our platform to create a new R&D environment, where teams are empowered by technology to fully use their creative capacity, quickly reimagine legacy products, open up new categories, and deliver better taste, nutrition, and affordability."
Kostopoulos further added, "AI helps solve the inefficiencies and imbalances of large food manufacturing systems, and the result is better food at scale, for everyone." In addition to commercial efforts, Proxy Foods AI has expanded its academic research initiatives. The company has partnered with Stanford University and Food System Innovations to develop product optimization models using Expert Guided Bayesian Optimization (EGBO), which reportedly achieved near-perfect sensory matching while surpassing traditional product development methods.
Furthermore, Proxy Foods AI is involved in a Good Food Institute-funded research project with the Federal University of Paraná and McGill University, focusing on the application of AI in developing cell culture media for cultivated meat production. On the infrastructure front, the company has teamed up with cybersecurity firm Aperio Global to incorporate a Zero Trust, quantum-resilient security layer that can compute on encrypted formulation data without compromising proprietary information. This added security is intended to assist organizations managing sensitive R&D, sourcing, manufacturing, and regulatory data.

Looking ahead, Proxy Foods AI anticipates AI will play an increasingly critical role in managing the complexities of food product development, particularly as manufacturers navigate nutrition, cost, clean-label requirements, allergens, shelf life, regional sourcing, and varying regulatory demands.
